Luffy wants to eventually beat all the Yonko not just Kaido. To Luffy these Yonko are in the way of him becoming the pirate king so he needs to take them out or at least prove that he is stronger than them. The reason he decided to take on Kaido originally was because of Trafalgar Law. Law created his alliance with Luffy for the sole purpose of taking down Kaido.
